Cold weather hampers maple syrup production

The cold weather gripping parts of Ontario and Quebec this winter has now stalled maple syrup operations.

But there’s no reason to worry about the season as a whole.

Producers are boiling the syrup down in February.

Maple syrup is a syrup usually made from the xylem sap of sugar maple, red maple, or black maple trees, although it can also be made from other maple species.
